Honey and Rosemary Roasted Leg of Pork

2 kg leg of pork
handful of raisins
3 teaspoons rosemary
Black pepper and salt to taste
200 ml honey
1 can whole tomatoes
200 ml cider / white light

Cut deep notches in the into the meat. Place a few raisins and rosemary in notches. Season meat with pepper and spread honey over the meat. Close in foil and  keep cool.
Stand for at least 12 hours.
Preheat the oven to 180C. Season the leg of pork with salt and drizzle with honey again.
Place leg of pork in roasting pan covered with foil, shiny side down, and bake for 1 ½ hours.
Place tomatoes in blender, add wine and pulp, pour tomato mixture over meat.
Bake another 30 minutes without the foil.
