Hot cross buns with crushed blueberries

Preparation method

  1. Firstly, put the milk and sugar into a bowl and using a whisk, mix in the eggs and leave to one side.
  2. Prepare the fruit sauce by mixing together all the ingredients and crushing the fruit lightly to allow the juices to run.
  3. Heat the butter in a pan, slice hot crossed buns in half, dip into the eggy mix and cook for about 2 minutes on each side. Remove the buns from the pan and place on the serving plate with the crushed blueberries piled on top. Top with two spoonfuls of cream, crème fraiche or ice cream. Serve immediately.
