MUTTON
CURRY.Ingredients 1-2kg Mutton / Lamb.
Cut into pieces
1-2tsp Crushed Ginger & Garlic Salt, Oil
1 Large onion Finely Chopped
2 Tomatoes Finely Grated
Potatoes
Pride of Durban Hot, Medium, Durban Oriental, Mnandi or Mutton Masala
Whole Spices: (Pride of Durban Breyani Mix)
5ml Fennel Seeds (soomph)
4 Whole Cloves
2 Sticks of Cinnamon
1 White Elachee
1 Star Aniseed
1-2tsp Crushed Ginger & Garlic Salt, Oil
1 Large onion Finely Chopped

Pride of Durban Hot, Medium, Durban Oriental, Mnandi or Mutton Masala
Whole Spices: (Pride of Durban Breyani Mix)
5ml Fennel Seeds (soomph)

2 Sticks of Cinnamon

1 Star Aniseed
How
to (1).Wash meat & leave
aside till water has drained out.
(2).Place meat in a bowl. Add Homestyle Crushed Ginger & Garlic,salt,2-3 tbs Pride of Durban Masala.Mix well & leave aside.
(3).While spices are penetrating into meat, heat oil in a pot, add chopped onions & cook until golden brown. Add the whole spices & allow to sizzle for a few minutes.
(4).Add grated tomatoes & allow to cook for 2-3 minutes.
(5).Add the meat & cook over a high heat for 5-10 minutes. Add 1 cup of warm water. (adjust temperature accordingly).
(6).Peel potatoes & cut in halves (slit in centre).
(7).Add potatoes to a half way cooked curry. Check the consistency of gravy & add more water if necessary.
(8).Once meat & potatoes are cooked garnish with freshly chopped coriander (Dhania).
(9).Serve with salad.
