Carrot Cake MasterChef South Africa

2 1/2 cup Cake Flour
2 tsp Baking Powder
1 1/2 tsp Bicarbonate of Soda
1 tsp Robertsons Salt
1/2 tsp Robertsons Mixed Spice
1/2 tsp Robertsons Cinnamon
1/2 tsp Robertsons Nutmeg
1/2 tsp Robertsons Cloves
1 1/4 cup Sunflower Oil
4 whole Eggs
1 1/2 cup Castor Sugar
1 1/2 cup Carrots, Grated
1 cup Granny Smith, Grated
1/2 cup Banana, Mashed
1 tbs Walnuts, Roughly Chopped
1 tbs Peacon Nuts, Roughly Chopped
1 tsp Sour Cherries
1 tsp Cranberries
1/4 cup Apricot Jam
1 tsp Orange Zest
1 tsp Lemon Zest
1/4 cup Butter
4 cup Icing Sugar
1 tsp Vanilla Essence
